Tomato Bruschetta Recipe
I love to make this easy appetizer as soon as the warm weather arrives but really it is good anytime.
I just use what I have on hand... a couple of tomatoes (but Roma tomatoes are the best) a little minced garlic, yellow, red or green peppers and of course fresh basil leaves.
Chop all the ingredients in tiny little pieces so that they fit on top of the baguettes slices.
Add 1 tbsp of olive oil and 1 Tbsp of Balsamic vinegar (or use either to your liking) and some black pepper
To get golden baguette slices I simply sliced the baguette into slices, added olive oil in a frying pan. (I prefer a plain ole black frying pan) because everything seems to cook up the better in it
. I also added a sprinkling of some kosher salt to the bread. Toast on both sides until golden
For this particular Bruschetta I added slices of fresh mozzarella on the baguette and then topped it with the fresh tomato bruschetta.
