Ladies Lunch Bow Tie Pasta Spinach Salad

Today I had a couple of my good friends over for lunch and served this delicious Bow Tie Spinach Chicken Salad. It has all kinds of yummy goodness in it and everyone wants the recipe. I got it from a sweet friend when I lived in Texas.
I found these napkin rings and placemats on serious clearance at pier 1 imports... 99 cents each...for each thing...oh yeah SCORE!!!!
I grilled my chicken this morning...with snow still on the ground....but the sun was shinning and it was beautiful outside.
I sliced the chicken on an angle and then into thirds for nice even pieces.
Are seeing all the goodness?? Cashews, mandarin oranges, toasted sesame seeds, spinach, bow tie pasta...yummers!!
It was so nice to visit with my gal pals and just chat...I need to do this more often. Sometimes I feel like I live in the cyber world too much these days.
I love lime green...so when I saw these placemats and napkin rings I knew exactly what napkin and salad plates I was going to use. So springy looking.
I would say my Ladies Lunch was a success :)
Here is the recipe
Chinese bow tie pasta spinach chicken salad
Dressing
(makes a lot so you may want to refrigerate the leftovers)
1 C vegetable oil
2/3 C teriyaki sauce
2/3 C white wine vinegar
4 T sugar (I may have added more sugar)
1/2 tsp salt
1/2 tsp pepper
Pasta
16 oz bow tie pasta, cooked al dente
Salad (adjust amounts to your taste of whatever you have in your fridge)
1 10 oz bag fresh spinach
1 cup craisins
3 cans mandarin oranges
1 bunch green onions chopped
1/2 C parsley or cilantro chopped
1/4 C sesame seeds, toasted
1 C honey roasted peanuts but I used cashews
2 C cooked chicken
Mix dressing and cooked pasta and chill. Toss together pasta and remaining ingredients before serving.

Did you use brown sugar or white sugar?
