I had the chance to fly to Salt Lake City on Friday to meet Madeline, my older daughter and go to a good friend of ours wedding in Logan, Utah. It was so beautiful up there!! All the mountains were so green and lush and there were meadows of golden yellow sunflowers everywhere. It was a perfect evening for an outdoor wedding. Madeline was taking gorgeous photographs and I tried! I took a few photos of the garden and then Madeline showed me how to take better photographs using my little camera. We had a great time on our mini mother-daughter weekend.

Do we really take the time to think about that? I know in my own life it is filled with peace and comfort...I don't know that I derserve it... but I am so thankful and appreciative that I have it. Almost every time I fly in an airport these days I see service men and women..either leaving to go off to war or returning home...I get so choked up when I look into their eyes and realize the sacrifice they are making for us here. i think about those that are over in Iraq right now continuing to fight for our freedom.....and fighting for those that continue to hope for freedom in their own country. I love these the United States and I am grateful to be an American no matter what! We have so much to be grateful for....so this 4th of July I hope we can all take a few moments to think about the rich blessings we have in our everyday life and celebrate!

The Hubs and I went to a really fun outdoor concert last night for Family Home Evening. It was a group from Philadelphia .....similar to "The four Tops" and they played all the great Mow town hits from the 60's and early 70's. There were tons and tons of families there....sitting on lawn chairs or on blankets just enjoying the music. Lots of people went down to the front where the entertainers were performing and danced with their kids...it was really a lot of fun to get out and enjoy the evening.
On of the cutest members of the audience was our "surrogate" grandchild.... Carson! He is just a little nugget of pudge. He loved the music and wanted to run all over the grass area and be right up front where all the action was.
There is just something special about live music that brings people together like nothing else. The last song of the night was a great oldie song "Love Train" ...and pretty soon everyone gathered into a train connecting one person to another...it was huge! People of every different race, men, women, children, mentally challenged people, old and young people, people in all different shapes and sizes.... all connected to each other with smiles on every face.....It was magical and beautiful...and I got choked up....and thought to myself....If this could only happen to everyone everywhere.....peace, acceptance, joy and happiness amongst all people. :)For everyone that has been asking what the paint color for my bathroom is....it is Behr Premium plus, Ultra pure white satin enamel, color: Valley Mist (460E-2) from Home Depot. Let me know if any of you decide to use it and where!

This was our Father's Day breakfast that we served Mike. He actually got up too early and ate some breakfast without us!! Then Emily and I got up and made some delicious herbed eggs with fresh Basil and Oregano (from my garden), and some Havarti cheese. They were so good. Then we made a nice fruit salad with blueberries, strawberries, bananas, apples and raspberries with thick vanilla yogurt on top. We also had some yummy bacon that I bake in the oven at 450 degrees with brown sugar sprinkled on the top. Very relaxing nice breakfast.
Looking for something other than french fries, baked potato or mashed potatoes to go along with your dinner tonight? These are to die for!! Yam fries...sweet and delectable! I am telling you there was not one left on the plate last night at our Father's Day dinner! I chose to make mine the shape of regular french fries instead of wedges and they turned out fabulous. The only thing I would like try is....... to make them a little bit crispy next time. Also I forgot to add the paprika and they were still unbelievable. Try them out and let me know what you think! Things You’ll Need:
4 Yam potatoes (about 2 lbs.
2 tbsp vegetable oil
2 tsp fresh orange juice
1 tsp salt
1/2 tsp black pepper
1 tbsp packed brown sugar
1/2 tsp ground cinnamon
1/2 tsp chili powder
1/4 tsp paprika
Parsley (optional)
4 Yam potatoes (about 2 lbs.
2 tbsp vegetable oil
2 tsp fresh orange juice
1 tsp salt
1/2 tsp black pepper
1 tbsp packed brown sugar
1/2 tsp ground cinnamon
1/2 tsp chili powder
1/4 tsp paprika
Parsley (optional)
Step1 Preheat oven to 425 degrees. While it is heating up, in a large bowl, mix the vegetable oil with the orange juice, salt and pepper.
Step2 Peel and cut the sweet potatoes into strips, like French fries and put the sweet potatoes into the vegetable oil mixture until well coated.
Step3 Next, place potatoes in a single layer on a large baking sheet. Bake until tender, about 15-20 minutes, while turning the fries over after about 10 minutes.
Step4 Combine brown sugar with cinnamon, if using, chili powder and paprika. Sprinkle evenly over sweet potatoes. Bake until glazed, about 5-10 minutes. Sprinkle optional parsley on top.
